Soba Noodle Salad

Ingredients:
Soba noodles
1/2 Purple cabbage
2 carrots
Kale
Spring onion
Edamame
Avocado
Mango
Sesame seeds
Coriander
Lime
Chilli (optional)
Lemon ginger tahini dressing:
- Juice of half a lemon
- 2 tbsp Tahini hulled
- 1/4 cup Maple syrup
- 1 tsp Minced ginger
- 1/4 cup Tamari
- 1/4 cup Olive oil
- Splash of water for desired consistency
Instructions:
1.Cook the soba noodles (according to package) and leave to cool completely,
2. Chop up the cabbage, and kale finely and grate carrots.
3. Mix in avocado cubed, mango cubed, spring onion, edamame, with a squeeze of lime.
4. Add in the cooled soba noodles, sesame seeds and coriander.
5. In a jar; add all the dressing ingredients and shake well. Add in a splash of water or more tahini to create desired consistency.
6. Pour dressing over salad and mix. Garnish with spring onion, sliced lime, coriander, sesame seeds or chilli.
